We finally got a proper snow.  I played hooky from work with fantasies of melting down snow to make a cup of hot cocoa.  I broke out my new coveralls and trudged out into the white drifts.  It was that perfect kind of snow - the kind that reminds you of cotton candy or down pillows.  Soft little flakes fell all morning like tiny weightless white sprinkles.  Little flecks of coconut bliss.

Snow Cocoa
Serves 4
(Adapted from Dorie Greenspan)

Ingredients

3 cups (750 g) whole milk
1/3 cup (80 g) water*
1/4 cup (50 g) sugar
1 tsp salt
1 tsp cinnamon
6 ounces (175 g) bittersweet chocolate, finely chopped

*If you are a kook like me and actually use melted snow, make sure you boil it for at least a minute, cool it and then filter it before heating it again for drinking.
Method

Bring the milk, water, sugar, salt and cinnamon to a boil in a saucepan.  Add the chopped chocolate to the pan off the heat and whisk until well blended.

The original recipe instructs you to blend the mixture with an immersion blender until frothy.  This is lovely, but unnecessary.

Serve with whipped cream, marshmallows or frothed milk and cocoa powder as I did.
